Buttermilk Pie

  1. Beat until light and lemon colored
    • 3 eggs
    • \frac{3}{4} sugar
  2. Add 3 Tb flour, beat again (a little)
  3. Add rest of ingredients:
    • 3 Tb melted butter
    • 1\frac{1}{2} C buttermilk
    • \frac{3}{4} tsp vanilla extract
    • 3 Tb lemon juice
    • grated rind of one lemon
  4. Pour into
    • baked pie crust (9” = 22 cm)
  5. Cook in 375° F (190° C) oven 20-30 minutes, until just set.
