Concombres au Yaourt

Cucumbers in yoghurt. This recipe is from the excellent and classic “La Cuisine en Afrique du Nord” by Haydee Tamzali, edited by Michael Tomkinson for Vilo Paris, 1986.

  1. Prepare the cucumbers
    1. Wash and peel 500g of small cucumbers.
    2. Cut into small cubes
    3. marinate half an hour with 2 Tb of vinegar and some salt
    4. squeeze them to rid them of as much vinegar and the liquid they have given off (and salt)
  2. Complete the preparation
    1. Mix the marinated and drained cucumber pieces with
      • 4 cloves of garlic (crushed),
      • one yoghurt (not very specific quantity, but typically 125ml, use more if you think it needs more) presumably plain unsweetened.
    2. Sprinkle with 1 Tb of dried mint leaves
    3. Chill.
    4. Serve.
